Inspired by the tradition in the small towns of Champagne, France, our Ratafia is made by adding small amounts of Brandy to an unfermented blend of Chardonnay, Pinot Gris, and Pinot Noir juices.
The fortified wine is then aged an average of six months in French oak barrels that dusts it with a slight roasted almond character. It develops a beautiful golden color and rich viscosity, with a burst of peach, dried apricot, and baked apple flavors. Balanced acidity carries the flavors to a long finish.
Our J Pear Liqueur is a twice-distilled eau de vie de poire. It is made from Bartlett pear juice from Mendocino County that are then distilled into a Brandy, then infused with de-ionized water (rain water) and liquid sugar.
The sugar broadens the palate and removes some of the heat, allowing the pear essence to shine though. Other rich characters explode in the glass like butterscotch, chamomile, vanilla, and apple pie. This quaff is especially delicious with our recipe for J Pear Liqueur Tiramisu or J Fizz.
