4 Egg Yolks
4 Egg Whites
½ lb. Mascarpone Cheese
½ cup Heavy Cream
64 Lady Fingers
4 oz. Sugar
6 cups Coffee
¾ cup J Pear Liqueur, to taste
In a small sauce pan, reduce the coffee to 4 cups. Combine the reduced coffee with the J Pear Liqueur, to taste.
In a mixer bowl fitted with the paddle attachment, combine 2 ounces of sugar with the egg whites until very stiff peaks form. Put aside into a large bowl.
In the same mixer bowl, whip the cream until firm peaks. Add to the egg white mixture and fold in.
In the same mixer bowl, combine the remaining 2 ounces of sugar with the egg yolks until you reach a thick ribbon. Add in the mascarpone cheese until incorporated. Fold this mixture into the cream mixture.
In a 8 ½ x 13” pan, spread some of this mixture on the bottom. Dip the lady fingers in the coffee/pear liqueur mixture and layer them on the bottom of the hotel pan horizontally. Spread ½ of the mixture of top of the ladyfingers. Then add another layer of ladyfingers that have been dipped in the coffee/pear liqueur mixture vertically. Spread on the remaining egg/cream mixture and top with shaved chocolate or cocoa powder.
